Launching us into the digital ether & onto the mushroom industry platform, we are excited to announce our founder and head of production, Julia Laidlaw will be giving a talk at the Moorabool Mushroom Festival, held by MYCOmmunity Applied Mycology . She will be discussing moving towards #zerowaste within mushroom cultivation and the recent shift to hybrid bucket & block production. To kick off this discussion we decided to write some introductory words below.
Like most cultivated gourmet mushrooms, oyster mushrooms are a saprotrophic fungus. They are masters of decomposition, unlocking nutrients for perpetual life as they consume the mounting detritus of the natural world. We like to describe them as the multi-linguists of fungi as they have an ability to train their enzymes to comprehend and digest an endless number of materials – agricultural waste, wood, coffee grounds, clothes, cigarettes, diesel...no problem. Phenomenal, and so delicious.
